Scalloped Potatoes |

Ingredients:
1/2 cup chopped onion (medium)
1 cloved garlic, minced
2 tablespoons butter or oleo
2 tablespoons all-purpose flour (I perfer corn starch)
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups milk
3 potatoes, peeled if desired
Directions:
Grease a 1 1/2-quart casserole dish: set aside. For sauce, in a
small saucepan cook onion and garlic in butter until tender. Stir in
flour, salt, and pepper. (If using corn starch all to milk before
putting into saucepan.) Add milk all at once. Cook and stir over
medium heat until thickened and bubbly.
Thinly slice potatoes. Place half the sliced potatoes in the
prepared casserole. Cover with half the sauce. Repeat potato and
sauce layers.
Bake, covered, in a 350 degree oven for 40 minutes, Uncover and bake
for 15 to 20 minutes more or until potatoes are tender.
Cheesy scalloped Potatoes: add about 1/4 cup cheese to sauce until
melted.
You may add diced ham to it as well or serve as a side dish with the
ham.
